I just love meals cooked in earthenware. I did a Chicken stifado the other night, very tasty and fall apart tender, a bit of wine and cinamon. Yum



I sometimes do Pork and Beans. One component is pork skin seasoned and sprinkled with herbs, rolled up and tied with string then cooked until soft and gelatinous.

What's your favorite earthenware dish?

I usually cook whole fish baked in salt. I must admit I've never cooked in a fire pit before, sounds like the sort of thing you want to cook a whole animal in.
