I make thai peanut noodles where I work. For the sauce I use freshly ground peanuts and using a food processor I put the ground peanut in, have ready hot water, rice wine vinegar and some garlic chili paste. With the processor running with ground peanut slowly add the hot water, add some rice wine vinegar just until you can smell a hint of it, add a little chili paste. Keep adding hot water until you get a smooth consistency not too thin, you still want it a little thick. Have the noodles done before this and get a skillet ready, saute the noodles, sauce and and whatever else you have going in just until it's mixed together and BAM done!
