    This is great as a summer dish, and can be eaten cold or room temperature.



    Ingredients:





    • 1 1/2 cup jasmine rice


    • 2 vine ripe tomatoes (diced)


    • 1/2 cup celery (diced)


    • 1 large ripe green bell pepper (chopped)


    • 1 cup of crumbled feta cheese


    • 1/2 cup fresh basil (chopped)


    • 1 16oz. can of cooked black beans


    • 1/2 cup scallions (chopped)


    • bottle of italian dressing


    • salt & cracked pepper to taste






    Other choices can be cherry/grape tomatoes, and rice wine vinegar.



    Steps:

  • Cook the jasmine rice according to the instructions on the box.


  • In a large bowl, throw in the celery, green bell pepper, black beans, feta cheese, scallions and tomatoes.


  • After the rice is done, mix into the large bowl with the rest of the ingredients.


  • Pour a cup of italian dressing over the salad and mix thoroughly.


  • Serve immediately or chill in the refridgerator and serve later.

    sounds really good. the only thing I would do differently is pour in oil, vinegar, and fresh herbs as opposed to bottled dressing - the taste is always too salty and strong.

    That's a good idea too, although personally I like it strong in a salad like this. However, it's pretty flexible, which is why I like it so much. There's so many ways to make it, really. A homemade oil and vinegar dressing is always a winner though.

    I agree. Olive oil, vinegar, and maybe some citrus juice.



    I'd also replace the green bells with roasted red or yellow bells. Of course, I really can't stand green bells. Worst fruit/veggie ever to me.
